Tuna casserole

Perfect for weeknight supper! You can also double up the portions to make a bigger dish.

Serves 2

2 cups of your favourite short pasta
1 127-gram can of tuna in water
1 10-oz can of mushroom soup
1 cup of cooked or canned mushrooms (optional)
2-3 green onions
1/2 cup mayonnaise
pepper to taste
handful of breadcrumbs or Panko

Cook the pasta according to package directions. Drain, return to the empty cooking pot and set aside to cool.

Open and drain the can of tuna. Separate any big chunks with a fork. Slice the green onions and separate the white parts from the green.

To the cooled pasta add all the ingredients except the green parts of the onions and the breadcrumbs. Mix well.

Place the pasta mixture into a buttered casserole dish and spread it out evenly. Cover the top with the green onions and breadcrumbs.

Bake for 30 mins at 350, until the top is lightly golden brown.

Serve hot.
